It never fails, we buy a bunch of bananas. They are still a little green so we sit them on the counter to ripen. Then like magic, they go from green to overly ripe and too mushy. Darn, looks like we need to make some banana bread. 😂BONUS: it’s super easy to make and freezes great too!

Banana Bread Recipe

1 cup granulated sugar

1 stick room temperature unsalted butter

2 large eggs

3 ripe bananas

1 tablespoon milk

1 teaspoon ground cinnamon

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/2 cup of chopped pecans (optional)

 

Preheat the oven to 325 degrees F and butter and line a loaf pan with parchment paper.

Cream the sugar and butter and add the eggs one at a time. Set aside.

Using either a mixer or a fork mash the bananas and add the milk and cinnamon.

In another bowl, mix together the flour, baking powder, baking soda, and salt. Sift this mixture.

Add the banana mixture to the creamed butter, sugar and eggs. Add the sifted flour, baking powder, baking soda, and salt to the mixture.

Pour batter into loaf pan and bake 75 - 80 minutes or until a toothpick inserted in the center comes out clean.

Set aside to cool on a rack for 20 - 30 minutes. Remove bread from pan and allow the loaf to cool completely before slicing.

Goes great with hot tea! ☕️

 

PRO TIP: Slice bread and place parchment paper in between layers before freezing.
