Hey y’all! I’m Ronnie. My step-momma, Katie, was a beautiful soul who adored Christmas. She’d start celebrating in September by rolling out the fall decor and blasting Christmas music at volume 11. Christmas decorations would go up November first and no part of the house was sheltered from her holly jolly transformation, even our Himalayan salt lamps! She felt that the orange glow of the lamps clashed with the red and green decor, so she went ahead and swapped their plain bulbs for red ones.
Katie always made Christmas the most special time of the year with her thoughtful gifts, holiday home makeover, and unshakeable jolly spirit. No Grinch’s in the Gross house! Her Christmas specialty was these cute little bite-sized chocolate chip cookies. She would whip out dozens with me and my baby sisters as neighborhood gifts, and of course, treats for Santa.
Katie passed about year and a half ago after a long cancer battle. To celebrate her memory we love to create those bite-sized chocolate chip cookies. I always find comfort in these bite-size bits of love. They are perfect for not only Christmas but any time of year. From my family to yours, I hope you’ll find comfort and joy in these delicious chocolate chip cookies!
Preheat oven to 375° F.
Mix flour, baking soda, and salt. Set aside. Cream the butter, granulated sugar, brown sugar, and vanilla extract. Add eggs, one at a time.
Gradually beat in flour mixture. Stir in chocolate chips. Drop by rounded teaspoons onto ungreased baking sheets.
Bake for 4 to 7 minutes or until golden brown. Cool on baking sheets for 2 minutes; place on wire racks to cool completely.
